2 Part Technique - After you've established Underhook & Head Control for the pass and collected your points, it's time to start hunting for the submission. In the case of your opponent "T-Rexing" his arms close to his chest, he is unwarily vulnerable for the North South Choke from Side Control. Use your chest to remove his nearside hand away from his neck and drape your previously underhooking arm onto his farside elbow. Before he realizes the danger and turns his head in defense, drop your lat onto his cheek and circle to the North South Position. Connect your hands using the Gable Grip, securing your choking hand from underneath for the choke, squeezing with constant, stable pressure. In the event that he turns his face toward you to prevent the choke from being applied, let go of his head and switch to Double Over Control from North South. Slide off of his chest a bit just enough to realign your lat/ribs with his chin to plow his face, turning him back into the choke.
